Coconut Tomato Lentil Soup

Finally discovered a way to make red lentils yummy - thanks husband for finding this recipe!

Ingredients: 

  • 2 tablespoons virgin coconut oil
  • 1 medium onion, finely chopped
  • 4-5 garlic cloves, finely chopped
  • 2½-inch piece ginger, finely grated
  • 1 tablespoon medium curry powder
  • ¼ teaspoon crushed red pepper flakes
  • ¾ cup red lentils
  • 1 14.5-ounce can crushed tomatoes
  • ½ cup finely chopped cilantro
  • 1 13.5-ounce can unsweetened coconut milk
  • Lime wedges

  1. Cook onion in coconyt oil until softened. 
  2. Add garlic, ginger, curry powder, and red pepper flakes; cook 2 min.
  3. Add lentils; cook 1 min. 
  4. Add tomatoes, ½ cup cilantro, salt/pepper, and 2½ cups water. Bring mixture to a boil. 
  5. Reduce heat and simmer gently, ~15-20 min.
  6. To serve, add cilantro and lime - lime is critical!
