Finally discovered a way to make red lentils yummy - thanks husband for finding this recipe!

Ingredients:
- 2 tablespoons virgin coconut oil
- 1 medium onion, finely chopped
- 4-5 garlic cloves, finely chopped
- 2½-inch piece ginger, finely grated
- 1 tablespoon medium curry powder
- ¼ teaspoon crushed red pepper flakes
- ¾ cup red lentils
- 1 14.5-ounce can crushed tomatoes
- ½ cup finely chopped cilantro
- 1 13.5-ounce can unsweetened coconut milk
- Lime wedges
- Cook onion in coconyt oil until softened.
- Add garlic, ginger, curry powder, and red pepper flakes; cook 2 min.
- Add lentils; cook 1 min.
- Add tomatoes, ½ cup cilantro, salt/pepper, and 2½ cups water. Bring mixture to a boil.
- Reduce heat and simmer gently, ~15-20 min.
- To serve, add cilantro and lime - lime is critical!
