Spiced Chickpeas
1 can chickpeas
cumin

salt/pepper

nutritional yeast (add after baked)
Bake 425 25-30 min
Dressing
.25c tahini
.25c sesame (or olive) oil
.25c lemon juice
2 tbsp white miso
2 tbsp soy sauce
1 tbsp maple
2 tbsp garlic/ginger puree
Rest of Salad
- lacinto kale (rubbed with salt)
- avocado
- mint
- dill
- basil
- grapefruit segments
- pomegranate seeds
- pickled red onion
- crumbled feta
Toss. Delightful. Maybe add another crunch - maybe some toasted breadcrumbs.
