Chickpea Buddha Bowl

 Adapted from minimalistbaker


Components:

  • Kale or other greens
  • Sweet potatoes - roasted, 400 deg 30-40 min
  • Red onion - soaked cold water
  • Chickpeas
    • 1 15 oz can
    • 1 tbsp cumin
    • 1 tbsp chili powder
    • 1 tbsp garlic powder
    • ~ 1 tsp oregano
    • ~1 tsp turmeric
    • Toss altogether, saute ~10 min medium heat in coconut oil
  • Tahini Sauce
    • 1/4 c tahini
    • 1 tbsp maple
    • 1/2 lemon juice
    • ~hot water
  • Cilantro Sauce
    • Cilantro
    • Lime
    • Mayonnaise
    • Cream cheese
    • garlic (1 clove max)
