Italian wedding soup

components----

Meatballs:
1 lb turkey
1 egg
1/2 c panko
1/2 c parmesan
2 tbsp oregano
2 tbsp smoked paprika
1 tbsp garlic powder
Salt pepper

Mix and set aside

Soup:
1 onion
12 cloves garlic
~2 c celery
~2 c carrots
1 bunch of chard
1 can white beans
10 c chicken broth
Red pepper flakes
2 lemons
Israeli couscous,  or small pasta

Saute onion and garlic in olive oil. Add celery, carrots and beans. Add chicken broth and bring to a boil. Add red pepper.

Drop in meatballs to simmering soup- cook 20 min.

Add in chard and lemon juice, simmer 5 more minutes.

Separately prep the couscous (1.5 c salted water, bring to boil, add 1 c couscous, bring back to boil, cover and simmer 15 min.)

Serve the soup over the couscous!

Fall Salad

 Great combo:

  • Roasted delicata
  • Red onion (soaked)
  • Avocado
  • Candied pecans
  • Feta
  • Dressing: dijon / sweet spicy mustard / golden balsamic / oil

Hamburger Helper

  • 1 lb ground beef
  • 1 medium onion, chopped
  • spices
    • 1 tsp chili powder
    • 1 tsp paprika
    • 1 tsp garlic powder
  • 1 lb pasta (shells)
  • 1 zucchini, grated
  • 2 c beef broth
  • 1 1/2 c milk
  • 2 c cheddar cheese
  • 1 tbsp ketchup
  1. Brown beef in olive oil & onion
  2. Add spices
  3. Add pasta, zucchini, then milk and broth + ketchup
  4. Bring to boil, then simmer until pasta cooked (~10 min)
  5. Add cheese

Whole Roasted Onions

 400 degrees

Line glass baking dish with parchment

Prep onions by slicing tops/bottoms (flat surface so they don't roll)

Drizzle balsamic and oil on top, add pat of butter to each top, then sea salt

Bake 60 min

Mashed Potatoes

  • 3 lbs - Cut potatoes into equal pieces
  • 1/2 stick butter
  • 1/3 c milk
Place potatoes in large pot, cover with cold, salted water ~1 inch or more above potatoes
Bring to boil, cook 15 min
Drain, let it dry for ~1 min
Add butter, milk and mash!

Roasted Mushrooms

 Simple and yum

  • 1 lbs mushrooms
  • 1 tbsp melted butter
  • 3 tbsp balsamic
  • 2 tbsp soy
  • 4 garlic cloves, minced or grated
  • 1/2 tsp brown sugar
  • Fresh herbs - thyme
400, coat mushrooms in mix, roast 15-20 min.

Chickpea Buddha Bowl

Components:

  • Kale or other greens
  • Sweet potatoes - roasted, 400 deg 30-40 min
  • Red onion - soaked cold water
  • Chickpeas
    • 1 15 oz can
    • 1 tbsp cumin
    • 1 tbsp chili powder
    • 1 tbsp garlic powder
    • ~ 1 tsp oregano
    • ~1 tsp turmeric
    • Toss altogether, saute ~10 min medium heat in coconut oil
  • Tahini Sauce
    • 1/4 c tahini
    • 1 tbsp maple
    • 1/2 lemon juice
    • ~hot water
  • Cilantro Sauce
    • Cilantro
    • Lime
    • Mayonnaise
    • Cream cheese
    • garlic (1 clove max)

Beef & Coconut Rice Bowls

Rice


1 cup uncooked jasmine rice
1 cup coconut milk
1 cup water
1 tablespoon toasted sesame oil

Follow instructions for rice cooker.



Beef & Vegetables


2 large carrots cut into matchsticks
4 baby bells peppers sliced
2 green onions chopped
1 tablespoon fish sauce
~1 tsp honey or maple syrup
2 tablespoons sesame oil
Juice of 1 lime + zest
Grated garlic, ~4 cloves
Grated ginger, ~1 inch
1 pound ground beef
pinch of black pepper
1/3 cup soy sauce
1/3 cup sweet thai chili sauce / or garlic chili sauce + sugar
2 cups fresh basil leaves
  1. Brown the beef + sesame oil 
  2. Add ginger and garlic
  3. Add soy sauce and chili sauce - let it simmer ~5 min
  4. Add basil
  5. Mix up the veggies: carrots, bell peppers, fish sauce, honey/maple, and 2 tbsp soy
  6. Top with toasted sesames, green onions, and/or cashews!

Creamy Farro Risotto

 Ingredients

  • (tons) Mushrooms
  • (a cup or so) Frozen peas, thawed
  • 1/2 Onion
  • ~2 cloves Garlic
  • 4 cups chicken stock (better than bouillon)
  • 3/4 c white wine
  • fresh thyme
  • 3 tbsp butter
  • 1.5 c farro
  • Parmesan (.5 - 1 cup), sour cream (2 dollops), cream cheese (dollop) - or creme fraiche
Directions
  1. Saute mushrooms and onions with butter; add garlic
  2. Add farro
  3. Add white wine, let it reduce
  4. Add thyme and chicken stock; bring to a boil; cover and simmer for 45-1 hr
  5. Take off lid ~45 min, add peas
  6. If too much water remains at 1 hour, pour off excess
  7. Add the creamy stuff
  8. Enjoy!

Bacon-wrapped Scallops

 Super easy

  1. Preheat oven 425
  2. Pre-bake the bacon ~3-5 min. then wrap around scallops with toothpicks. Salt/pepper/olive oil. 
  3. Bake 12-15 minutes
